Why does the program not show GST amounts and produce Tax Invoices

A It is assumed that in general, the clubs using this software are clubs (non-profit organizations), without the business turnover to force them to become GST registered, and the charter of the program was not to be an accounting package, but an event management program

Also the developer has not the time to apply to the rigorous rules and testing that would be required for GST calculation as required by the ATO

Development has concentrated on the main issue of event management for the primary audience, not for profit clubs

How do I delete an entry that was added by mistake

A This is done via the Edit Entry Screen, see the Edit Entry tutorial exercise here

Can the program keep track of Yard bookings for horses

A Yes

The program has entry and other charge accounting built into it. There are standard charge categories for fees associated with stables and yards, and reports for stable and yard requirements which are based on the stable and yard categories used in applying other charges. Even if you do not charge for yards, set the fee to $0 and apply them anyway, with the quantity field set to how many are required.

Select the Stable and Yard requirements report to print a list of who wants what. Also, after selecting this report, there is an option to generate an Excel spreadsheet with account holders allocated to stable and yard numbers, which you can then massage to suit individual requirements, and print the stable/yard allocation lists.
